There’s just something about a summer night that so easily evokes nostalgia, don’t you think?

It’s that moment when the day finally starts to cool off, the moment the sun starts kissing the horizon, the moment the cicadas and crickets start singing. And in those moments, it’s so easy to think back to those easy, long-ago summer nights of no worries and no cares—ones that held things like slow sunset walks on the beach, sitting around roaring campfires with friends, swinging on a swing or rocking in a rocking chair on a porch as stars begin twinkling above, and running around and laughing in lush fields at dusk, trying to catch fireflies in a jar.

When I look back on my fond memories of summertime as a child, I tend to go into a little bit of a nostalgic, sensory overload:

I remember the way summer tasted… a delicious mixture of ice-cold sun tea, juicy watermelon, plump strawberries, delicious grilled hot dogs, and sweet, melting Popsicles.

I remember the way summer smelled… a potent potpourri of coconut-laced sunscreen, smoky, toasty campfires, newly cut lawns, and freshly fallen rain.

I remember the way summer felt… an intoxicating combination of lush, soft grass, the hot, hard concrete of a pool’s edge, warm, gritty sand, and freezing cold water sprayed from hoses, Slip ‘n Slides, and sprinklers.

Oh, and how about the quintessential childhood treat: Ice cream? If so, then we think you’ll go crazy for this Easy No-Churn Peanut Butter Chocolate S’Mores Ice Cream.

You can mix up this Easy No-Churn Ice Cream with only 3 ingredients (no ice cream maker necessary!), forgo any mix-ins, slide it in the freezer, and spoon up some delicious vanilla ice cream in a matter of hours, but why stop there? My daughter and I had fun mixing in some of our favorite sweet treats to come up with this perfect summer-inspired flavor, Peanut Butter Chocolate S’Mores Ice Cream.
